Trying to be intentional with our summer break can be challenging, especially with a new baby in the household! To keep the 8 year-old occupied, I’m keeping it simple with a weekly routine disguised as a daily theme:

Movie Monday, Tasty Tuesday, Water Wednesday…you get the idea!

It’s been over 100 degrees in Texas for days now! So what better recipes to experiment with than something frozen?

Lemon Cream Popsicles:

  • 1 c CountryTime Lemonade Drink Mix
  • 1 c sugar
  • 1 cup milk
  • 1 c almond milk

Mix well and pour into desired containers, freeze for 6 hours! Have fun adding food coloring and fruit! (If you’re a fan of Chic-fil-a’s famous Frosted Lemonade, you will love this recipe!) Feel free to sub liquids with whatever you have on hand! Let that creativity flow!

Koolaid Sherbet

  • 1 packet Koolaid, any flavor
  • 3 c milk
  • 3/4 c sugar

Mix well and freeze in a shallow dish for one hour. Remove to mixing bowl and beat for 2 minutes (you can skip this step, but it creates a creamier texture!). Add to a freezer safe container, freeze for several more hours and enjoy! Feel free to sub liquids here as well! I found that 1 c whole milk, 1 c almond milk, and 1 c water was quite delicious!
